 Chicken Curry

INGREDIENTS:
    • Chicken – 1000 g

    • Onions – 3

    • Green chilies – 2–3

    • Coriander leaves – 1 handful

    • Yogurt – 1 cup

    • Red chili powder – 1½ tsp

    • Coriander powder – 2 tbsp

    • Garam masala powder – ½ tsp

    • Salt – 1 tsp or to taste

    • Turmeric powder – ½ tsp

    • Black pepper – 10

    • Cloves – 7

    • Cinnamon stick – 1

    • Green cardamom – 6

    • Oil – 150 ml

    • Water – as needed

METHOD:

In a pot, add oil, onions, black pepper, green cardamom, cloves, and the cinnamon stick. Cook until the onions turn golden brown. Remove the fried onions and whole spices, and let them cool.

In the same oil, add ginger-garlic paste and stir-fry for 3–4 minutes. Add red chili powder, turmeric powder, coriander powder, and salt. Stir well and let it bubble. Add a little water and cook on medium flame for 2 minutes.

Now add the chicken pieces and stir-fry for 5–7 minutes on medium flame. Cover and cook for another 5–6 minutes on low flame.

Meanwhile, in a blender, add the yogurt, fried onions, and the reserved spices. Blend into a smooth paste and set aside.

Add the blended paste into the pot, stir, and cook for 2 minutes. Cover and continue to cook until the chicken is 90% done.

Add garam masala powder and some boiling water as needed. Add green chilies and coriander leaves, then cover and cook for another minute.

Chicken curry is ready to serve with rice, roti, or chapati. Enjoy!
