Mutton Paya
Ingredients
(For Broth)
Mutton paya 1750 gms
Onions 2 medium
Bay leaves 3
Cloves 12
Cinnamon sticks 3 (2 inches in size)
Cardamom black 5
Green Cardamom 14
Ginger 2 small pcs (remove the skin)
Garlic cloves 12
Salt 2 tsp or to taste
Star ani seed 1
Water 2 liter or as required
(For Gravy)
Red chili powder 2 tsp or to taste
Coriander Powder 2tbsp
Turmeric Powder 1/2 tsp
Salt 1 tsp or to taste
Garam masala 1/2 tsp
Yogurt 250 gms (beaten)
Onions 2 medium
Ginger Garlic Paste 1tbsp
Atta 1 tbsp. dissolve in 4 tbsp. of water
Oil 100 ml
(For Garnishing)
Ginger 1 small julienne cut
Green Chilies 3-4 finely sliced
Lemons 4-5 cut into half
Coriander leaves 1 bunch (chopped)
Method
In a pot add 1ltr of water add 1750 gms of paaye and all the garam masala, ginger, garlic, onion and salt and bring it to boil and then cover n cook on low flame for stewing for 3-4 hours. In a separate pot add 100 ml of oil add ginger garlic paste, fry for 2 mins add red chili powder, turmeric powder, coriander powder, salt, and fry for 2 to 3 mins. Take 2 onions and grind with water to form a paste. Then add that onion paste in a masala and cook until oil separates then add beaten yogurt and again fry then cover n cook for 2 mins when gravy is done oil separates. Now add cooked paaya from broth and add in a gravy. Then strain broth n add in it. Take 1 tbsp. of Atta dissolve in 4tbsp of water add in paaya and cook for 5 mins Add garam masala powder, some coriander leaves, green chilies, lemon ,ginger cover n cook for 2 mins delicious paaya is ready o eat with roti or naan.
